Summer Cucumber Salad for Fresh Side Dish

While comfort food is full of well, comfort, and makes the coldest days seem that much warmer, sometimes you just need a light and fresh side dish as the summer months approach.  What better way to keep a plate looking bright and healthy than with fresh vegetables straight from the garden?  Keeping it simple with a few ingredients, this recipe couldn’t be easier!  Tomatoes, cucumbers, and celery help to make this dish a must have at family cookouts, or a quick spring snack!

You Will Need:

2 Medium Sized Cucumbers, peeled and diced

2 Medium Tomatoes, diced (grape tomatoes also work well)

2 Medium Stalks of Celery, diced

½ Cup of Trader Joe’s Lowfat Tzatziki (or any brand that is considered “lowfat”)

Salt, to taste

Pepper, to taste

Dried Dill, to taste

 

Directions:

Add the cucumbers, tomatoes, and celery together in a medium-sized bowl.  Next, add the tzatziki, salt, pepper, and dill. Refrigerate for 30 minutes before serving.  This recipe takes a total of 10 minutes to make and should yield about 4 servings.

Taking little to no time to prepare is a huge plus for the busy body, but another bonus to this recipe is how nutritious it is for you.  Coming in at only 51 calories per serving and 2.7 grams of fat, you will be going back for a second helping!

How could you not enjoy this fresh and light side dish that screams springtime!  With crisp veggies and a light cream dressing, you will be making this as a snack or barbecue fixing to brighten any warm weather meal!
