Sugar-Free Strawberry Pie

Incorporate this recipe for Sugar-Free Strawberry Pie as part of a healthy Birthday bash; it’s festive yet not overly fattening like traditional pies and cakes. Stick some candles in it and try some other healthy alternatives to go with it. Fruit and veggie platters, baked chips, and low-fat dips for appetizers compliment a sugar-free pie nicely. Lean meats with healthy salads for a meal do too. A commitment to health and eating wisely doesn’t have to disappear during celebrations!

Ingredients

9″ pie shell

3 cups water

3 rounded tablespoons cornstarch

2 3-ounce boxes sugar-free strawberry gelatin

2 pounds fresh strawberries, chopped

Directions

1.      Bake pie shell and let cool.

2.      Add water, cornstarch, and boxes of gelatin to a large saucepan. Stir constantly until it boils and cook for 1 minute. Cool to room temperature.

3.      Add strawberries to gelatin, then mix and pour into pie shell. Refrigerate 2 hours.

Serves 8
