This featured recipe is brought to you from the kitchn! Zucchini Parmesan crisps are delicious treats for any type of event or occasion. Bake them to avoid using unnecessary fats from oils. Give this recipe a shot because healthy eating doesn’t have to be boring! Be creative and get to cooking!
Ingredients:
- 2 medium zucchini (yellow, green or one of each!)
- 1/4 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/2 teaspoon of garlic powder
- 1 tablespoon of olive oil
- 1 egg white
- 1/2 of whole wheat panko bread crumbs
- 1/2 cup of coarsely grated Parmesan cheese
Directions:
- Preheat oven to 450 degrees F and lightly grease baking sheet with olive oil or just use a non-stick baking sheet
- Slice zucchini into 1/4 inch rounds. Transfer to a bowl and season with salt, pepper and garlic powder. Drizzle olive oil and egg white (or just the egg white) over the top and toss to coat evenly.
- Mix panko crumbs and Parmesan cheese together in a separate, shallow bowl. With a few zucchini rounds at a time, dredge the zucchini in the panko-parmesan mixture and transfer to the baking sheet.
- Bake for 25 minutes, or until they are golden brown and crispy. Cool for about 5 minutes and transfer to a serving dish. Serve with your favorite salsa or dip and enjoy the deliciousness of these amazing treats.
