2 tablespoons white onions, sliced
2 tablespoons white mushrooms, sliced
2 tablespoons tomatoes, diced
1/2 cup Egg Beaters
Directions
1. Coat a skillet with nonstick spray. Saute broccoli, onions, and mushrooms
for 4 minutes over medium-high heat.
2. Remove veggies from skillet and place in a bowl with tomatoes. Add
Egg Beaters to skillet and cook on medium high for 2 minutes on
each side.
3. Add vegetable mixture to middle of omelet and fold over. Serve immediately.
