How to:
Step 1- After washing your sweet potato, cover it with tin foil.
Step 2- Either preheat your oven or prepare your toaster oven for baking at 375* F.
Step 3- Bake for approximately 40 minutes, depending on the size of your potato.
Step 4- Remove from the oven. Cut your sweet potato open and scoop out the majority of the inside of the potato to create the basis for your potato skins.
Step 5- Sprinkle shredded cheese and the chopped green onions over the potato skins.
Step 6- Place in the oven at the same temperature for about 8 minutes.
Step 7- Remove your potato skins from the oven and sprinkle parsley over them.
Step 8- Place them back in the oven for 2-3 minutes.
Step 9- Remove from the oven, let cool and enjoy!
