This is the perfect easy and creative recipe to use up that leftover squash you have sitting in your fridge! Make these squash boats for an afternoon snack, to use as h’orderves at your party, or to use as the side vegetable to your dinner. Whatever their intention, these yellow slices of heaven will surely work wonders on your taste buds.

Ingredients

4 yellow squash, halved 8 rosemary Triscuits or any flavored crackers
1/4 cup shredded cheddar cheese Pepper, to taste

Step One: Halve and gut the squash and put squash pieces in a bowl.

Step Two: Crush crackers and add to the bowl. Next, add the cheddar cheese and pepper (or the seasoning of your choice).

Step Three: Mix ingredients until evenly combined and spoon into the hollowed-out squash boats.

Step Four: Bake at 375 degrees for about 20 minutes, or until cheese is melted and starts to brown.
