If you’re carving pumpkins with your family and friends, save the seeds! There are many ways to enjoy them for a delicious snack. Here are two recipes you can try.
Sweet and Spicy Pumpkin Seeds
Pumpkin seeds
Cooking spray
Kosher salt and pepper
1 pinch cinnamon
1 pinch cumin
1 pinch cayenne
1 tablespoon honey
1. Preheat oven to 350 degrees. Discard membranes of the pumpkin and spread seeds on baking sheet. Bake for 20 minutes.
2. After baking, toss seeds with cooking spray, and salt and pepper to taste, plus cinnamon, cumin, cayenne, and honey.
3. Return to oven and roast seeds until golden, about 15 minutes. Scrape from pan and stir seeds as they cool to prevent sticking.
Cinnamon Sugar Pumpkin Seeds
1 1/2 cups pumpkin seeds
Cooking spray
2 tablespoon sugar substitute (Splenda, Truvia, etc.)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1. In a bowl, toss the seeds with the cooking spray, coating thoroughly. Add salt and seasonings.
2. Spread seeds in one even layer across a cookie sheet covered in foil
3. Bake for 30 minutes, or until the seeds are golden brown. Stir the seeds occasionally so they toast evenly
