April is National Soyfoods Month and vegetarians and carnivores alike love soy. It’s a malleable product which is a substantial source of protein! I’m working with the Soyfoods Association of North America, and they’ve asked me to share one of my favorite recipes using a soy product substitute. It HAD to be my Protein Power Potato, because I already do that! I love substituting soy products for meat on a regular basis and feel it serves both my health and my taste buds to do so. Try using it in salads, sandwiches, casseroles, stir fry and more. Give this yummy recipe a go. It’s delicious and uber easy to make.
Ingredients
1 medium baking potato
1⁄2 Morningstar Farms Chik Patties Original
1 tablespoon reduced-fat shredded cheddar mix
Sprinkle shredded Romaine lettuce
Sprinkle tomatoes, diced
**For added flavor, serve this potato with a one-ounce side cup of ketchup, reduced-fat sour cream, salsa, mustard, or barbecue sauce.
Directions
- Bake potato in oven at 400°F for 15 to 20 minutes or in the microwave for 10 to 12 minutes or until the skin is crispy and inside is soft. Cut the potato in half.
- Microwave one Morningstar Farms Chik Pattie for one minute and cut it into small pieces.
- Scoop out 90 percent of white potato pulp and discard it. Flatten out the remaining potato skin and put chik pattie pieces in it. Sprinkle cheese on top.
- Place potato back in the oven for 3 minutes. Remove potato from oven and top with lettuce and tomatoes.
