If you are anything like I am, you love a good dip. It is a quick and easy snack that can be paired with almost anything, from vegetables to crackers. This dip is so creamy and delicious you would never guess the main ingredient is a vegetable!

 

Cauliflower Yogurt Dip

1 head cauliflower (2 pounds) chopped
Cooking spray
1/4 teaspoon cumin
Coarse salt
Red-pepper flakes
1 cup low-fat plain yogurt
1 tablespoon lemon juice

  1. Heat oven to 425 degrees. On a baking sheet, spray cauliflower with cooking spray and sprinkle with cumin. Season with salt and red-pepper flakes. Roast, stirring once, until golden brown and tender, about 25 minutes.
  2. Once cooled, puree cauliflower with yogurt and lemon juice in a food processer. Season with salt and serve with something to dip in it!
