Treat your taste buds with this delectable recipe that combines the natural sweetness of sweet potatoes with the savory goodness of ground turkey. Packed with nutrients and bursting with flavor, this dish is a perfect healthy meal for a busy week.

Ingredients:

2 medium-sized sweet potatoes

1 pound lean ground turkey

1 onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder (adjust to taste)

1/2 teaspoon of Italian Seasoning

Salt and pepper to taste

Olive oil for cooking

Fresh cilantro or parsley for garnish (optional)

Sour cream (optional)

Greek yogurt (optional)

Instructions:

  1. Preheat oven to 400 degrees.
  2. Line the baking sheet with foil. Use a fork or knife to pierce small holes all over the sweet potato skins. Place sweet potatoes onto the prepared baking sheet.
  3. Drizzle olive oil over the sweet potatoes, then season with salt and pepper. Massage the oil and seasoning into the skin.
  4. Cook sweet potatoes in the oven, flipping carefully with tongs about halfway through, until fork tender. Bake for 45 minutes to 1 hour.
  5. In a large skillet, heat olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spoon as it cooks. Stir in the chopped onion and minced garlic. Sauté until the onion. Add the diced red bell pepper to the skillet and cook for a few minutes until it softens.
  6. Sprinkle ground cumin, smoked paprika, chili powder, salt, and pepper over the turkey and vegetable mixture. Stir well to ensure an even coating of the spices.
  7. Cover the skillet and let the ingredients simmer over medium-low heat.
  8. Remove sweet potatoes from the oven after they are soft and slit open the sweet potato down the middle.  Stuff the ground turkey mix into the sweet potato. Garnish with fresh cilantro or parsley if desired.
