Ingredients
– 1 cup rolled oats
– 1/3 cup unsweetened coconut flakes
– 1/2 teaspoon sea salt
– 1 cup raw shelled pistachios
– 2 tablespoons olive oil
– 1/4 cup maple syrup

Instructions
1. Preheat oven to 350 degrees.
2. Line an 8-inch pan with parchment paper.
3. Using a food processor with a S blade, process the oats, pistachios, and salt until a meal is formed. While the motor is still turning, drizzle in the maple syrup and olive, forming a crumbly, moist wet dough.
4. Press and spread the dough evenly in the pan. Cover it with the coconut flakes.
5. Bake for 10 to 12 minutes until the coconut is golden brown and the dough is cooked thoroughly. Do not over-bake.
6. Holding two sides of the parchment paper, lift the cooled out. Cut into even squares.
