No Time for Breakfast? Grab a Healthy Oatmeal Banana Muffin to Go

We’re filling our schedules up with more and more every day and mornings can be especially crazy in preparing to take on such a hectic agenda. Rushing to get to work, getting the kids ready for school, showering and getting ready after you workout…these are just a few things that can leave you in a chaotic whirlwind during the early hours of the day.  Sometimes our busy schedules can cause us to skimp on what we eat for breakfast, or worse, completely skip out on the most important meal of the day!  Instead of missing meals, try making these simple and delicious muffins on the weekends in your spare time.  These muffins are extra healthy, containing no sugar, oil, or flour.  Now you can be prepared and have a grab-and-go breakfast with plenty of flavor and nutrition to start your day right!

You Will Need:

2 ½ cups of old-fashioned oats

1 cup plain low-fat Greek yogurt

2 eggs

½ cup honey

2 teaspoons baking soda

2 tablespoons ground flax seed

1 teaspoon vanilla

2 ripe bananas

 

Baking Instructions:

Heat your oven to 400 degrees and spray a muffin tin with non-stick cooking spray.  You can also use muffin liners that are placed in each muffin hole.  Pulse the oats in a food processor for about 10 seconds, and then add all the remaining ingredients in the food processor.  Process the ingredients until everything is well mixed and incorporated, and the oats are smooth.  For a protein burst, try adding walnuts to your batter.  If you want to make these muffins as a guilt-free dessert, add a few dark chocolate chips instead!  Pour the batter in to each muffin hole, and bake for 18-20 minutes.  Allow them to cool and enjoy!

Be sure to store your muffins in airtight Tupperware or plastic bags, and place them in the fridge to ensure the muffins stay fresh for the whole week!  Instead of waking up extra early to eat a balanced breakfast, or missing meals and skipping breakfast completely, all you have to do is reach in your refrigerator and grab a muffin to go!  With no sugar, flour, or oil, this muffin is the perfect start to your healthy and active day!
