This Mediterranean salad will transport you directly to the island of Mykonos. It’s easy to make, and filled with vitamins and minerals. Grab your ingredients and enjoy this colorful, flavorful Mediterranean favorite!

Ingredients

-2 15-ounce cans of Chickpeas

-1 Cucumber

-2 cups Cherry Tomatoes

– ¼ cup Red Onion

-1 Red Bell Pepper

– ½ cup Black olives

-4 oz Feta Cheese for the Mediterranean flare

– ¼ cup chopped Parsley

Chop each ingredient into small diced pieces and add to a large bowl. Toss the ingredients around the bowl until it looks like a colorful masterpiece. Drizzle the salad with a lemon vinaigrette and you are all done!

This simple and easy salad can serve as your entire lunch, a smaller side salad, and can even be put on a sandwich. Warm some pita and grab your tzatziki sauce or chicken souvlaki skewers to accompany your salad. Eat up!
