Maple-Roasted Sweet Potatoes

Thanksgiving is almost here and we all know what that means-time to EAT, EAT, and well you guessed it, EAT. Serve this delicious sweet potato dish at your holiday table and show your family and friends that is POSSIBLE to stay healthy even at a holiday revolved all around food.

Ingredients:

2 1/2 pounds of sweet potatoes, peeled and cut into 1 1/2 inch pieces (should be about 8 cups)

1/3 cup pure maple syrup

1 tablespoon lemon juice

1/2 teaspoon salt

Freshly ground pepper, to taste

How to make the sweet potatoes

  1. Preheat the oven to 400 degrees
  2. In a 9-by-13 inch glass baking dish, arrange the sweet potatoes in an even layer
  3. Combine maple syrup, lemon juice, salt , and pepper on a small bowl
  4. Pour the mixture over the sweet potatoes; toss to coat
  5. Cover and bake the sweet potatoes for 15 minutes
  6. Uncover, stir and cook stirring ever 15 minutes until tender and starting to brown

Per serving this dish contains 96 calories, 2 g fat (1 g sat, 0 g mono), 5 mg cholesterol, 19 g carbohydrates, 1 g protein, 2 g fiber, 118 mg sodium, 189 mg potassium.
