Removing most of the yolks from this omelet recipe allows you to keep the same texture while cutting a good deal of fat. The tomato basil sauce goes great with the cream cheese, making for a delicious and healthy alternative to a cheese omelet.
Ingredients:
- 1 whole egg
- 3 egg whites
- 2 T fresh basil
- 1/2 cup diced tomatoes
- 1 oz. low fat cream cheese
- 2 tsp. chopped garlic
Directions:
- Blend egg and egg whites until color is uniform.
- Combine basil, garlic, and diced tomatoes in a pan and cook over low heat until garlic begins to brown.
- Pour egg mixture into non stick pan over low heat and swirl until the eggs cover the pan evenly.
- After the omelet begins to set add half of the tomato mixture and all of cream cheese to the center of the pan.
- Fold the eggs over the mixture.
- Turn off the eat, cover, and let sit for 2 minutes.
- Pour rest of tomato mixture over the omelet and serve.
