Low Fat Mediterranean Omelet

Removing most of the yolks from this omelet recipe allows you to keep the same texture while cutting a good deal of fat. The tomato basil sauce goes great with the cream cheese, making for a delicious and healthy alternative to a cheese omelet.

Ingredients:

  • 1 whole egg
  • 3 egg whites
  • 2 T fresh basil
  • 1/2 cup diced tomatoes
  • 1 oz. low fat cream cheese
  • 2 tsp. chopped garlic
Directions:
  1. Blend egg and egg whites until color is uniform.
  2. Combine basil, garlic, and diced tomatoes in a pan and cook over low heat until garlic begins to brown.
  3. Pour egg mixture into non stick pan over low heat and swirl until the eggs cover the pan evenly.
  4. After the omelet begins to set add half of the tomato mixture and all of cream cheese to the center of the pan.
  5. Fold the eggs over the mixture.
  6. Turn off the eat, cover, and let sit for 2 minutes.
  7. Pour rest of tomato mixture over the omelet and serve.
