Appetizers are sometimes the best part of our meals when we go out to eat. Instead of actually having to go out to eat, try this tasty Kale & Artichoke Dip. Usually they serve spinach and artichoke dip are served at restaurants but we are changing the game with kale!
Ingredients:
- 1 can of artichokes, drained and chopped
- 4 ounces of softened low-fat cream cheese
- 6 ounces of Greek plain yogurt
- 1/2 cup of shredded Parmesan cheese
- 1/2 cup of shredded Mozzarella cheese
- 1 tsp of garlic salt
- 6 ounces of kale, chopped
- 1 package of your favorite tortilla chips
Directions:
- Preheat oven to 400 degrees.
- Combine large artichokes, cream cheese, yogurt, Parmesan cheese, 1/2 cup of Mozzarella, garlic salt, and kale until completely mixed together in a large bowl.
- Pour mixture into a 1 1/2 quart dish. (Don’t worry about the kale, it will reduce down as it bakes)
- Cover and bake for 20 minutes.
- Stir and bake for 10 more minutes or until kale is cooked all the way.
- Add remaining Mozzarella cheese on top and bake uncovered for 5 minutes.
- Serve with your favorite tortilla chips and enjoy!
