We love this delicious vegetarian personal-size alternative to a typically heavy Italian meal. Enjoy!
Ingredients:
1 Eggplant
1 Tsp. Italian Herb Seasoning
1 Cup Marinara Sauce
1 Cup Shredded Mozzarella
1 Bell Pepper
1 Cup Agaricus Mushrooms
Salt and Pepper to Taste
Feel free to add any of your other favorite healthy pizza toppings
Directions:
1. Slice your eggplant into 1/4 – 1/2 inch slices and set on a paper towel to dry out
2. Season your Eggplant slices with italian herbs and salt and pepper
3. Roast the eggplant in the over for 15-20 minutes at 400 degrees (the eggplant should start to turn tender but not mushy)
4. Remove the eggplant from the oven and top each slice with marinara sauce, mozzarella, mushrooms and diced peppers
5. Place the eggplant back in the oven to broil for about three to five minutes
