Ingredients:
- 1 to 1 1/2 pounds of lean ground turkey
- 1 pack of lasagna noodles
- 3 cups of tomato sauce
- 6 cups chopped spinach
- 2 tomatoes, sliced
- 2 cups of ricotta cheese ( low-fat)
- 2 cups shredded mozzarella cheese (low fat)
Directions:
1. Preheat the oven to 375 degrees.
2. Boil the lasagna noodles until done (about 10 minutes).
3. Add your ground turkey to a pan and cook until done (season to taste). Drain and add tomato sauce. Let simmer for about three minutes.
4. Boil spinach until softened.
5. In your baking dish, lay out three lasagna noodles. Spread 1/3 of all ingredients on each layer (ricotta cheese, mozzarella cheese, tomatoes, ground turkey and sauce). Make three even layers, dividing each layer with the noodles.
6. Bake for 25-30 minutes.
