This time of year calls for a savory but nutritious fall-style salad. This brussel sprout salad is one of the best ways to impress your family and friends with this festive and fun salad. 

 

Ingredients:

 

2 lb. Brussels Sprouts

¼ Cup Almonds

1 Honeycrisp Apple

1/2  Cup Dried Cranberries

 

Dressing:

 

1/2 c. olive oil

1/4 c. lemon juice

2 tbsp. Dijon mustard

1 tbsp. honey

2 tsp. kosher salt, divided

1 tsp. ground black pepper, divided

 

Directions:

  1. Trim the stem end of each Brussels sprout, shave brussel sprouts with a mandolin or slice thin with a sharp knife
  2. Chop almonds into small pieces
  3. Slice apple into cubes
  4. Toss together, brussel sprouts, apples, dried cranberries, chopped almonds, parmesan cheese
  5. Dressing: Combine all dressing ingredients and toss with the dry ingredients
  6. Plate, and enjoy!
