This recipe just oozes “family mealtime.”
Ingredients:
- 1 lb ground turkey
- 1 medium-sized zucchini, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil (plus extra for potato chips)
- Sea salt, to taste
- Pepper, to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp Italian seasoning
- 2 tbsp tomato paste
- 3-4 potatoes, thinly sliced
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat 2 tbsp of olive oil over medium heat.
- Add chopped peppers, zucchini, onions, and minced garlic to the skillet. Sauté until the vegetables are tender.
- Push the vegetables to one side of the skillet and add the ground turkey to the other side. Break it up with a spatula and cook until browned.
- Season the turkey with sea salt, pepper, garlic powder, onion powder, paprika, chili powder, cumin, and Italian seasoning. Mix everything together.
- Once the ground turkey is cooked through, add tomato paste to the mixture. Stir well, and then let it simmer for a few minutes.
- While the turkey mixture is simmering, prepare the homemade potato chips. Place thinly sliced potatoes on a baking sheet, brush with olive oil, and sprinkle with sea salt. Bake in the oven until crispy.
- Pair the ground turkey mixture with the homemade potato chips for a delicious and healthy meal.
