Nothing screams comfort more than a warm bowl of chili. With football season in full swing, and the coldest days ahead of us, turkey chili is the perfect recipe to keep you cozy and satisfied whether you’re tailgating in the parking lot or snuggled up on the couch in front of the TV.
Ingredients:
• 1 whole yellow onion, pre-chopped
• 1/3 cup chopped jalapeño peppers
• 1 tablespoon of minced garlic
• 1 tablespoon of chili powder
• 2 tablespoon of tomato paste
• 2 teaspoon of dried oregano
• 1 teaspoon of ground cumin
• ¼ teaspoon salt
• 1 can cannellini (white kidney) beans, rinsed and drained
• 3 chopped beefsteak tomatoes
• 1 ½ cup low sodium chicken broth
• ½ cup of chopped cilantro
• 1-2 lbs. ground turkey
• 1 large cooking pot
Directions:
• Mix ground turkey and chopped onion in a saucepan and cook on medium-high heat
• Once cooked, drain fat from the saucepan and pour the turkey and onions into large cooking pot
• Add broth first, then add in all other ingredients except the cilantro
• Bring to a boil, reduce heat and let simmer for 10-15 minutes
• Stir in cilantro and it’s ready to serve
Tip: Add some shredded cheese, chopped avocado, light sour cream, and a lime wedge on top of the chili.
