Citrus Ginger Baked Salmon

This is a low fat and easy way to cook salmon. The pouch ensures all the flavor and moisture can’t escape resulting in a moist and flavorful fish without any extra calories.

Ingredients:

  •  8 oz. fresh salmon
  • 2 T sliced fresh ginger
  • 1 orange sliced
  • 1 lemon sliced
  • 2 cloves of slice garlic
  • 2 sprigs fresh rosemary
  • 1 tsp. sea salt
  • 2 tsp. fresh pepper
  • 1 large piece of aluminum foil.

Directions:

  1. Preheat oven to 350 degrees.
  2. Wash salmon, pat dry, and season with salt and pepper.
  3. Place orange and lemon slices on aluminum foil and place salmon on top of the slices.
  4. Cover the top of the salmon with the ginger and garlic slices.
  5. Place sprigs of rosemary on top of the salmon.
  6. Fold foil into a sealed pouch around the salmon.
  7. Bake for 20-25 depending on desired level of doneness.
  8. Remove salmon from the pouch and pour juice into a saucepan.
  9. Cook juices over high heat for 2 minutes.
  10. Pour juices over the salmon and serve.
Servings: 1
Try your own combination of herbs for a different taste! Or add fresh veggies, like broccoli or carrots, and get some extra minerals and vitamins.
