This is a low fat and easy way to cook salmon. The pouch ensures all the flavor and moisture can’t escape resulting in a moist and flavorful fish without any extra calories.
Ingredients:
- 8 oz. fresh salmon
- 2 T sliced fresh ginger
- 1 orange sliced
- 1 lemon sliced
- 2 cloves of slice garlic
- 2 sprigs fresh rosemary
- 1 tsp. sea salt
- 2 tsp. fresh pepper
- 1 large piece of aluminum foil.
Directions:
- Preheat oven to 350 degrees.
- Wash salmon, pat dry, and season with salt and pepper.
- Place orange and lemon slices on aluminum foil and place salmon on top of the slices.
- Cover the top of the salmon with the ginger and garlic slices.
- Place sprigs of rosemary on top of the salmon.
- Fold foil into a sealed pouch around the salmon.
- Bake for 20-25 depending on desired level of doneness.
- Remove salmon from the pouch and pour juice into a saucepan.
- Cook juices over high heat for 2 minutes.
- Pour juices over the salmon and serve.
