Amanda Freitag, celebrity chef and recurring judge on Food Network’s competition show “Chopped,” and registered nutritionist Julie Barto for the MS Active Wellness Nutrition Program joined forces to make a healthier version of Valentine’s Day Brownies. Their secret ingredient is a can of black beans making this unique treat high in fiber and protein and very low in fat and calories. It’s perfect for people striving to lose weight or those who have a disease like MS that need to follow a strict diet in order to feel good and remain healthy. I haven’t tried this recipe, but I’ve heard other folks who’ve made Black Bean Brownies and loved them. I know it sounds super strange, but I imagine we can only find out if we try! Ingredients:
1 15-oz can black beans, rinsed and drained very well
1 brownie mix
Directions:
1. Return the rinsed beans to the can, and add enough water to cover the beans.
2. Transfer beans/water to food processor, and process until smooth.
3. Transfer the bean puree to a large bowl, and stir in the brownie mix.
4. Transfer to a pan coated in cooking spray, and follow the directions on the brownie box for baking. ** You may need to add a few more minutes to the baking time.
