Blackening meat is a great way to add a ton of flavor without adding a ton of calories.The roasted red pepper sauce takes a few minutes and works wonderfully with the blackened chicken.
Ingredients:
- 8 oz. chicken breast
- 1 T blackening seasoning
- 2 whole bell peppers
- 2 T chopped garlic
- 1 tsp cumin
- 1 T sea salt
Directions:
- Preheat oven to 350 degrees.
- Wash chicken, pat dry, and liberally coat with blackening seasoning.
- Wash bell peppers, cut off the top and then cut into halves
- Place cast iron skillet over high heat for 3 minutes and then add the chicken breast.
- Cook chicken for 1 minute on each side.
- Place pan with chicken in the oven for 20 minutes of until the juices run clear.
- Remove chicken and let sit for 10 minutes.
- Preheat broiler.
- Place pepper halves under the broiler for two minutes on each side.
- Combine roasted peppers, garlic, and cumin in a pan on medium heat until the peppers begin to fall apart.
- Place mixture in a blender and blend until smooth.
- Pour sauce over chicken and serve.
