Blackened Chicken with Roasted Pepper Sauce

Blackening meat is a great way to add a ton of flavor without adding a ton of calories.The roasted red pepper sauce takes a few minutes and works wonderfully with the blackened chicken.

Ingredients:

  • 8 oz. chicken breast
  • 1 T blackening seasoning
  • 2 whole bell peppers
  • 2 T chopped garlic
  • 1 tsp cumin
  • 1 T sea salt
Directions:
  1. Preheat oven to 350 degrees.
  2. Wash chicken, pat dry, and liberally coat with blackening seasoning.
  3. Wash bell peppers, cut off the top and then cut into halves
  4. Place cast iron skillet over high heat for 3 minutes and then add the chicken breast.
  5. Cook chicken for 1 minute on each side.
  6. Place pan with chicken in the oven for 20 minutes of until the juices run clear.
  7. Remove chicken and let sit for 10 minutes.
  8. Preheat broiler.
  9. Place pepper halves under the broiler for two minutes on each side.
  10. Combine roasted peppers, garlic, and cumin in a pan on medium heat until the peppers begin to fall apart.
  11. Place mixture in a blender and blend until smooth.
  12. Pour sauce over chicken and serve.
