Ingredients

  • 1 medium onion
  • 4 medium beetroots
  • 2 cups water
  • 1 tbsp grated ginger
  • 1 tsp cumin powder
  • 1 green chili
  • 1 tbsp fresh lemon juice
  • 1 ½ tbsp sesame seed oil

 

Instructions

Step 1: Prepare the Beets

Wash and peel the beetroots, then cut them into medium-sized cubes.

Step 2: Cook the Beets

Place the cubed beets in a medium saucepan and add enough water to cover them. Cover the pan with a lid and bring to a boil over high heat. Once boiling, reduce the heat to medium and let the beets cook until tender, about 20 to 25 minutes. Once done, drain the water and set the cooked beets aside.

Step 3: Sauté the Aromatics

In a separate pan, heat the sesame seed oil over medium heat. Add the grated ginger and chopped onion, sautéing for 2 to 3 minutes until fragrant and slightly softened.

Step 4: Combine and Cook

Mix in the cooked beetroot, chopped green chili, and cumin powder. Stir well and cook for another 1 to 2 minutes, allowing the flavors to blend.

Step 5: Add the Final Touch

Remove from heat and drizzle with fresh lemon juice for a refreshing citrus kick.
