Most alcohol gets burned off during the cooking process. But if you have some recipes that require a cooking wine or liqueur and don’t want to risk it on children or less-than-healthy guests, give these simple substitutions a try.
Replace one tablespoon of bourbon or sherry with:
- one tablespoon of apple or orange juice
Replace one tablespoon of coffee liqueur or chocolate liqueur with:
- 1/2 teaspoon chocolate extract or
- 1/2 teaspoon instant coffee in 2.5 teaspoons of water
Replace one tablespoon Grand Marnier or citrus liqueur with:
- 2.5 teaspoons orange juice plus 1/2 teaspoon orange extract
Replace 1/4 cup fruit-flavored liqueur with:
- 1/4 cup fruit juice
Replace 1/4 cup white wine with:
- 1/4 cup chicken broth in savory recipes
- 1/4 cup apple or white grape juice in dessert recipes
Replace 1/4 cup red with:
- 1/4 cup beef broth in savory recipes
- 1/4 cup cranberry juice in desserts
