2 cups rolled oats (use gluten-free oats if needed)
1/2 cup almond flour
1/4 cup maple syrup or honey
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped nuts or dried fruits
1/4 cup dark chocolate chips
Instructions:
Preheat and Prepare: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix Dry Ingredients: In a large bowl, combine rolled oats, almond flour, cinnamon, nutmeg, baking powder, and salt.
Mix Wet Ingredients: In another bowl, mix together the mashed sweet potatoes and maple syrup (or honey) until well combined.
Combine & Add Extras: Gradually add the wet ingredients to the dry ingredients, mixing well. If using, fold in the chopped nuts or dried fruits and dark chocolate chips.
Form Cookies: Using a spoon or your hands, form the mixture into small cookie-sized rounds and place them on the prepared baking sheet. Flatten slightly with your fingers or the back of a spoon.
Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes or until the edges are lightly golden.
Cool and Enjoy: Once done, remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
