Ingredients
– 1/4 cup chia seeds
– 1 1/2 cups cashew milk, almond milk, or coconut milk
– 1 tablespoon maple syrup
– 1/4 teaspoon cinnamon
– pinch of salt
– 1/2 tablespoon lemon juice or orange juice
– seasonal fruit and/or chopped nuts for topping

Instructions
1. In a large bowl, stir together chia seeds, cinnamon, salt, lemon juice, and maple syrup.
2. Chill covered for 30 minutes. Then stir again. Chill for 6 more hours, or overnight.
3. Scoop chia pudding into bowls and top with the fruits, nuts, and extra maple syrup, if desired.
