Ingredients
– 1 cup dried red lentils
– 1/4 cup smooth tahini
– 3 tablespoons fresh lemon juice
– 2 tablespoons melted coconut oil
– 2 garlic cloves
– 1/2 teaspoons grated fresh ginger
– 1/2 teaspoon cumin
– 1/4 teaspoon coriander
– 1/4 teaspoon turmeric
– 1/4 teaspoon cardamon
– 1/4 teaspoon onion powder
– 1/4 teaspoon cayenne
– 1/2 teaspoon sea salt
– freshly grounded black pepper
Instructions
1. Bring a medium pot of water to a boil. Add in the lentils. Reduce to low and simmer, covered, until the lentils are tenders, usually 15 minutes.
2. Drain the water and let them cool for 10 to 15 minutes.
3. Transfer to a blender. Add in the tahini, lemon juice, coconut oil, garlic, ginger, cumin, coriander, turmeric, cardamon, onion powder, cayenne, salt, and black pepper. Blend until super creamy.
4. Chill until the hummus is ready to be served.
