Ingredients

  • 6 medium Yukon Gold potatoes, peeled and cubed
  • 2 medium sweet potatoes, peeled and cubed
  • ½ cup skim milk
  • 1 cup shredded Gouda cheese
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper

Directions

  • Put the sweet and the Yukon Gold potatoes in a Dutch oven and cover them with water. Bring it to a boil and then reduce the heat to cook it uncovered for about 10-15 minutes, or until tender. Drain the water and return to the pan.
  • Mash the potatoes and gradually add the milk. Stir in the cheese, paprika, salt and pepper.
