Mahi Mahi is a fun meal to order at a restaurant, but it’s also easy to make at home! Give this healthy recipe a go.
Ingredients:
1/4 cup light coconut milk
4 limes or 6 tablespoons of lime juice
4 mahi fillets (6-8 ounce)
1 1/2 cups diced peeled ripe mango (about 1/2 pound)
1/3 cup finely diced red bell pepper
2 tablespoons minced red onion
1 tablespoon chopped cilantro
1 teaspoon minced peeled fresh ginger
1 Serrano chile
1/2 teaspoon salt
1/4 teaspoon grounded black pepper
Non-stick cooking spray
 
Directions:

1. Mix 3 tablespoons of coconut milk and 3 tablespoons of lime juice in a shallow dish. Add fish. Cover and marinate at room temperature for 15 minutes.

2. Mix remaining 1 tablespoon coconut milk, remaining 3 tablespoons juice, mango, and next 5 ingredients (through chile) in a bowl. Add 1/4 teaspoon salt. Mix well.

3. Remove fish from the marinade, and discard the marinade. Sprinkle fish with remaining 1/4 teaspoon salt and pepper. Heat a grill pan over medium-high heat. Spray the pan with the non-sticking cooking spray. Cook the fish 4 minutes on each side (should become flaky). Serve with mango salsa.

Avocado slices are a great addition to this delicious meal.
