Appetizers are sometimes the best part of our meals when we go out to eat. Instead of actually having to go out to eat, try this tasty Kale & Artichoke Dip. Usually they serve spinach and artichoke dip are served at restaurants but we are changing the game with kale!

Ingredients:

  • 1 can of artichokes, drained and chopped
  • 4 ounces of softened low-fat cream cheese
  • 6 ounces of Greek plain yogurt
  • 1/2 cup of shredded Parmesan cheese
  • 1/2 cup of shredded Mozzarella cheese
  • 1 tsp of garlic salt
  • 6 ounces of kale, chopped
  • 1 package of your favorite tortilla chips

Directions:

  1. Preheat oven to 400 degrees.
  2. Combine large artichokes, cream cheese, yogurt, Parmesan cheese, 1/2 cup of Mozzarella, garlic salt, and kale until completely mixed together in a large bowl.
  3. Pour mixture into a 1 1/2 quart dish. (Don’t worry about the kale, it will reduce down as it bakes)
  4. Cover and bake for 20 minutes.
  5. Stir and bake for 10 more minutes or until kale is cooked all the way.
  6. Add remaining Mozzarella cheese on top and bake uncovered for 5 minutes.
  7. Serve with your favorite tortilla chips and enjoy!
