Ingredients:
1 Can Pumpkin (15 oz)
1 cup applesauce
2/3 cup water
4 eggs
3-1/3 cups flour
3 cups sugar (or sugar alternate)
2 teaspoons baking soda
1-teaspoon cinnamon
1 teaspoon nutmeg
1 cup dried cranberries
Directions:
- Mix together pumpkin, applesauce, water and eggs
- In a separate bowl combine the flour, sugar, baking soda, cinnamon and nutmeg.
- Add the contents of the pumpkin mixture to the dry ingredients and mix together until it is one smooth texture.
- Stir in the dried cranberries.
- Place the batter into two loaf pans.
- Bake for 50 minutes at 350 degrees. The bread is complete when you can insert a toothpick and remove it with no residue.
- Let the bread cool in the pans for 10 minutes and then move them to a wire rack.
