Ingredients
Cauliflower crust
1 small head cauliflower, cut into small florets (should yield 3 cups of cauliflower rice)
1 egg, lightly beaten
½ cup shredded mozzarella cheese
2 cloves minced garlic
½ teaspoon fine grain sea salt
½ teaspoon dried Italian herb seasoning
¼ teaspoon ground black pepper
Toppings
2 tablespoons shredded mozzarella cheese
A pinch of dried Italian herb season
Marinara sauce, for serving (optional)
Directions
1.Preheat your oven to 250 degrees
2.Simmer garlic in a small pan and cook until it is fragrant usually about 1 minute max. Set aside once cooked
3. Use a food processor to rice the cauliflower (it should be even pieces but not totally pulverized.)
4. Place cauliflower in a bowl and microwave for 8 minutes
5. Place the cauliflower in a tea towel and squeeze out all of the moisture you can (usually over one cup.)(this prevents mushy bread sticks)
6.Place the cauliflower in a bowl and add your egg, mozzarella, italian seasoning, garlic, salt and pepper. Mix these ingredients well
7. Spread your mixture in a loaf pan and bake for 25-30 minutes or until golden
8. Flip and bake for an additional 10 minutes until both sides are golden
9. Place your cauliflower loaf to the side
10. Preheat the broiler and sprinkle cheese and herb topping on the loaf
11. Broil for a few minutes until the cheese has melted
12. Let the loaf cool and then cut it into bread sticks (usually creates about 10)
