Fitz’s Protein Power Potato Recipe

1 medium baking potato

1⁄2 Grilled Chicken breast cooked

2 tablespoons reduced-fat shredded Cheddar mix

1⁄4 cup shredded Romaine lettuce

1⁄4 cup tomatoes, diced

**For added flavor, serve this potato with a one-ounce side cup of ketchup, fat-free sour cream, salsa, mustard, or barbecue sauce.

Directions

  1. Bake potato in oven at 400°F for 15 to 20 minutes or in the microwave for 10 to 12 minutes or until the skin is crispy and inside is soft. Cut the potato in half. Cut chicken into small pieces.
  2. Scoop out 90 percent of white potato pulp and discard it. Flatten out the remaining potato skin and put chicken in it. Sprinkle cheese on top.
  3. Place potato back in the oven for 3 minutes. Remove potato from oven and top with lettuce and tomatoes.
