Halloween is right around the corner, and what better way to celebrate than to throw together some yummy yet healthy Halloween treats? Don’t throw your healthy eating habits out the window in exchange for sugary candy, try these recipes instead. They’re also great choices for kids
Spooky Pumpkin Smiles
Ingredients:
- 1 medium-sized pumpkin weighing about 5 pounds.
- Pinch of cinnamon
- 1 tablespoon apple juice concentrate(Hint: Check the frozen food section for 100% apple juice concentrate.)
Procedure:
- Preheat oven to 400 degrees F.
- Peel pumpkin like you would melons. Cut off the top and bottom of the pumpkin so that it is stable on a flat surface. Work your way from top to bottom with a sharp knife, filet the skin off. Next, cut the pumpkin into wedges. Then, remove the pulp and seeds.
- Season each wedge with cinnamon and apple juice concentrate.
- Bake on a large nonstick baking sheet for 25 minutes.
- Serve hot.
Witches’ Hair Spaghetti Squash
Ingredients:
- 1 spaghetti squash
- water
Procedure:
- Preheat oven to 350 degrees F.
- Cut the spaghetti squash in half(length-wise.)
- Scrape out the seeds and guts, much like a pumpkin.
- Pour around a quarter-inch of water into a glass baking dish.
- Place the squash halves in the dish(face down.)
- Place dish in the oven, letting it cook for an hour, or when skin is tender.
- Scrape out the middle of the squash to reveal spaghetti-like strands.
Sinfully Sweet Cinnamon Apples
Ingredients:
- 6 Fuji or Granny Smith apples
- 1/4 cup frozen apple juice concentrate(thawed)
- 3 tablespoons vanilla extract
- 6 cinnamon sticks
- (optional) Raspberries and fresh mint leaves
Procedure:
- Preheat oven to 350 degrees F.
- Core apples to 1/2 of the bottom of the apples(If you do not have a corer, cut out the stem area first, then the core. Use a spoon to dig out the seeds. Make holes about 3/4 inch wide.)
- Mix the apple juice concentrate and vanilla. Then, pour into the cored center of each apple.
- Place a cinnamon stick in the center of each apple.
- Place apples on nonstick baking sheet and bake for 20 minutes.
- (optional) Serve with garnished raspberries and mint leaves.
