ENTREE
First, you have to have a hearty bowl of chili for your fan friends. Try this recipe from allrecipes.com for a healthier spin on chili using ground turkey instead of beef.
Ingredients:
1 pound lean ground turkey
1 onion, chopped
2 cups water
1 (28 ounce) can canned crushed tomatoes
1 (16 ounce) can canned kidney beans – drained, rinsed, and mashed
1 tablespoon garlic, minced
2 tablespoons chili powder
1 1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon ground cayenne pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Directions:
On medium heat, warm oil in large pot. Cook ground turkey evenly in non-stick pot until brown, and stir in onions and cook until tender.
Next, pour the water into the pot, along with the tomatoes, kidney beans and garlic. Then add all seasonings including paprika, cayenne pepper, chili powder, salt, pepper, oregano, and cumin. Bring all ingredients to a boil. Then reduce heat to low and simmer for 30 minutes. Serves 8 of your football friends!
SNACK
You have to prepare the perfect dip to dunk during the commercial breaks to keep the party going. Instead of falling prey to the cheesy, greasy, heavy dips and fattening chips, try this fresh and inventive salsa from food.com that is full of flavor and not fat!
Ingredients:
15 ounces black beans, rinsed
1/2 cup salsa
1 -2 garlic clove, minced
2 tablespoons fresh lime juice
2 tablespoons cilantro, chopped
1/4 teaspoon ground cumin
Salt
Pepper
Directions:
Place all ingredients except salt and pepper into food processor. Pulse only 1 to 2 times (course chop) to incorporate all ingredients. Pour into bowl and add salt/pepper to taste.
Instead of using chips, dip Popchips (low calorie chip made from popcorn) or even lightly salted sliced cucumbers into the salsa. Offer a small bowl of regular tortilla chips as well, just not the whole bag. It’s all about portion control!
