Baked Pumpkin Oatmeal

Beeeeeeeep! Beeeeeeeep! Beeeeeeeep! Your alarm goes off in the morning and it is tough to get out of bed. Between the cold weather outside and the warmth of your sheets, it takes a lot to get up and get moving. With a little bit of tasty motivation, however, it may be a bit easier to get up and start your day. How about some warm, baked pumpkin oatmeal? Not only is oatmeal a healthy whole-grain, pumpkin is packed with health benefits too. The two combined provide a comforting, delicious breakfast sure to energize you and your metabolism. This recipe is made with healthy substitutions such as apple sauce and almond milk. Make this recipe ahead of time, store it in the refrigerator, and heat it up during the morning rush.

Baked Pumpkin Oatmeal

Ingredients (6-8 Servings)

  • 3 cups old-fashioned rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup agave nectar
  • 1 cup almond milk
  • 2 tablespoons unsweetened apple sauce
  • 2 eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 1/2 teaspoon cinnamon
  • 3/4 cup canned pumpkin
  • Extra cinnamon on top (optional)
  • Sprinkle brown sugar on top (optional)
  • Raisins poked in (optional)

Instructions

Preheat oven to 350.

  1. Mix all ingredients together in a medium size bowl.
  2. Pour into a sprayed baking dish.
  3. Bake for 35 minutes, or until it is no longer wet.
  4. Cut up, and top with anything you desire.
