Cooked Quinoa with mushrooms, broccoli, carrots, and an egg.

This dish is super easy to make. Almost too easy to even call it a recipe. It covers all the bases you need – protein, carbs, veggies, and healthy fat. Quinoa is very versatile and is a complete protein – which means that it contains all the amino acids you need. You get the fat and a ton of vitamins from the egg yolk, along with the protein in the egg. It is also naturally gluten free and vegetarian.

Ingredients:

  • ¼ c. (dry) quinoa – it expands when you cook it
  • 1 egg
  • Broccoli
  • Carrots
  • Mushrooms
  • Garlic
  • Cumin

 Directions:

  1. Cook quinoa according to package. Set aside.
  2. Steam vegetables either on the stove with water, or in the microwave.
  3. Once a pan is heated up, crack the egg and let cook for a few seconds. Once the top is almost cooked, put a bit of water in the pan and cover. This will give you the perfect runny egg.
  4. Sautee mushrooms and once they finish, add other vegetables, and sprinkle some garlic and cumin on the top.
  5. Put quinoa and vegetables in a bowl, and finally add the egg.
  6. Voila!
