Cooked Quinoa with mushrooms, broccoli, carrots, and an egg.
This dish is super easy to make. Almost too easy to even call it a recipe. It covers all the bases you need – protein, carbs, veggies, and healthy fat. Quinoa is very versatile and is a complete protein – which means that it contains all the amino acids you need. You get the fat and a ton of vitamins from the egg yolk, along with the protein in the egg. It is also naturally gluten free and vegetarian.
Ingredients:
- ¼ c. (dry) quinoa – it expands when you cook it
- 1 egg
- Broccoli
- Carrots
- Mushrooms
- Garlic
- Cumin
Directions:
- Cook quinoa according to package. Set aside.
- Steam vegetables either on the stove with water, or in the microwave.
- Once a pan is heated up, crack the egg and let cook for a few seconds. Once the top is almost cooked, put a bit of water in the pan and cover. This will give you the perfect runny egg.
- Sautee mushrooms and once they finish, add other vegetables, and sprinkle some garlic and cumin on the top.
- Put quinoa and vegetables in a bowl, and finally add the egg.
